That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make maafe

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Groundnut stew

110 minutes · serves 6 · Very easy

What you need

  • 800g lamb or beef, in chunks
  • 200g smooth peanut butter
  • 2 onions
  • 4 tbsp tomato purée
  • 1 tin chopped tomatoes
  • 2 sweet potatoes
  • 1 carrot
  • 1 small cabbage wedge
  • 1 scotch bonnet
  • 1 litre stock
  • Oil

What you do

  1. 1Brown the meat hard and set it aside.
  2. 2Onions and tomato purée in the same pot for 8 minutes until dark.
  3. 3Loosen the peanut butter with a ladle of hot stock into a smooth paste, then stir it in — adding it straight from the jar makes it seize.
  4. 4Meat back in with the rest of the stock, tinned tomatoes and the whole chilli. Simmer 50 minutes.
  5. 5Sweet potato and carrot in for 25 minutes, cabbage for the last 10.
  6. 6It is ready when a layer of red oil sits on the surface. Over rice.
