How to make aloo gobi

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Dry, the way it should be

35 minutes Β· serves 3 Β· Easy

What you need

  • 1 cauliflower, in florets
  • 3 potatoes, in chunks
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp coriander
  • Thumb of ginger
  • 1 green chilli
  • 3 tbsp oil

What you do

  1. 1Fry the cumin seeds in the oil until they darken.
  2. 2Potatoes in first, 8 minutes, then the cauliflower. Let both take colour before you touch them.
  3. 3Ginger, chilli and ground spices, salted, tossed through.
  4. 4Lid on, lowest heat, 15 minutes, shaking the pan rather than stirring. It should be dry and a little caught underneath.
