That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make dhokla

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Steamed, with the tempering

30 minutes Β· serves 4 Β· Medium

What you need

  • 200g gram flour
  • 1 tbsp semolina
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • 1 tsp eno or 1/2 tsp bicarbonate of soda
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 2 green chillies, split
  • 1 tsp sugar for the syrup

What you do

  1. 1Whisk the gram flour, semolina, sugar, salt, lemon and 200ml water to a batter like thick cream. Rest it 10 minutes.
  2. 2Stir in the eno at the very last moment β€” it starts working immediately β€” and pour straight into a greased tin.
  3. 3Steam 15 minutes. A skewer comes out clean.
  4. 4Pop the mustard seeds in the oil with the chillies, add 4 tbsp water and the sugar, and pour that over the top. Cut into squares once it has soaked in.

The microwave one

12 minutes Β· serves 2 Β· Easy

What you need

  • 1 tbsp lemon juice
  • 1/2 tsp eno
  • Salt
  • Oil

What you do

  1. 1Batter as above, rested 5 minutes.
  2. 2Eno in, poured into a greased microwave dish.
  3. 3Full power 3 minutes, then rest 3 minutes before cutting.
