Yesterday’s rice, as intended
12 minutes · serves 2 · Easy
What you need
- 400g cold cooked rice
- 2 eggs
- 2 spring onions
- 1 garlic clove
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Frozen peas
What you do
- 1The rice must be cold and dry. Fresh rice steams and clumps.
- 2Scramble the eggs quickly in a very hot oiled wok, then tip them out.
- 3Fry the garlic and white parts of the onion for 30 seconds, add rice and peas.
- 4Press the rice against the pan and leave it — you want some grains to catch.
- 5Return the egg, add soy and sesame oil off the heat, scatter the green onion.
