That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make goulash

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The Hungarian way

150 minutes · serves 6 · Easy

What you need

  • 1kg beef shin, in chunks
  • 4 onions, sliced
  • 3 tbsp sweet paprika
  • 1 tsp caraway
  • 2 peppers
  • 2 tomatoes
  • 3 potatoes
  • Oil

What you do

  1. 1Cook the onions in the oil for 20 minutes until they are truly soft and sweet. There is more onion than feels right and that is correct.
  2. 2Off the heat, stir in the paprika — burnt paprika is bitter and there is no saving it.
  3. 3Beef, caraway and just enough water to cover. Lid on, lowest heat, 2 hours.
  4. 4Peppers, tomatoes and potatoes in for the last 30 minutes.
  5. 5It should be a thick soup, not a stew. Add water if it tightens.
