That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make locro

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The long winter one

240 minutes · serves 8 · Easy

What you need

  • 300g dried white maize, soaked overnight
  • 200g white beans, soaked overnight
  • 500g pork belly, diced
  • 2 chorizo, sliced
  • 400g pumpkin, diced
  • 1 sweet potato, diced
  • 2 onions
  • 1 tbsp paprika
  • 1 tsp cumin
  • Spring onion and chilli oil, to finish

What you do

  1. 1Cover the drained maize and beans with water and simmer 90 minutes, topping up as needed.
  2. 2Brown the pork and chorizo in another pan and add them with their fat.
  3. 3Onions, paprika and cumin in. Another hour on low, stirring so it does not catch.
  4. 4Pumpkin and sweet potato in for the last 45 minutes — they should dissolve and thicken it.
  5. 5It is ready when a spoon stands up in it. Chilli oil and spring onion on top in the bowl.
