How to make misir wot

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Properly hot

45 minutes · serves 4 · Easy

What you need

  • 300g red lentils
  • 2 onions, diced very fine
  • 4 garlic cloves
  • Thumb of ginger
  • 3 tbsp berbere
  • 3 tbsp oil
  • 1 tbsp tomato purée

What you do

  1. 1Dry-cook the onions in the pan for 8 minutes before any oil goes near them. They should be soft and sticky.
  2. 2Oil, garlic and ginger in, then the berbere and purée, fried 3 minutes until it smells toasted rather than raw.
  3. 3Lentils and 900ml water, simmered 25 minutes until they have gone completely.
  4. 4Salt at the end. It thickens as it stands, so keep it looser than you think.

Milder

40 minutes · serves 4 · Easy

What you need

  • 300g red lentils
  • 2 onions
  • Garlic and ginger
  • 1 tbsp paprika
  • 1 tsp cayenne
  • 1 tsp cardamom
  • Oil

What you do

  1. 1As above, swapping the berbere for the paprika, cayenne and cardamom.
  2. 2Simmer until soft, salt at the end.
