How to make nasi campur

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

A plate of five things

75 minutes Β· serves 4 Β· Medium

What you need

  • 300g rice
  • 400g chicken, in pieces
  • 4 eggs
  • 200g tempeh
  • 200g long beans
  • 4 tbsp sambal
  • 1 tin coconut milk
  • Turmeric, lemongrass, galangal
  • Fried shallots
  • Prawn crackers

What you do

  1. 1Rice first, with a pandan leaf or a little turmeric.
  2. 2Chicken simmered in coconut milk with lemongrass and turmeric, 30 minutes, then fried until the edges brown.
  3. 3Tempeh cut into batons and fried crisp, then tossed in sweet soy and chilli.
  4. 4Beans blanched and tossed with sambal and a spoon of coconut milk.
  5. 5Boiled eggs halved. Everything arranged round the rice in small heaps, fried shallots over the lot. No two plates the same and none of it mixed until you eat it.
