Pad pak

Whatever greens are in, hit hard in a very hot pan.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make pad pak

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

One very hot pan

12 minutes Β· serves 2 Β· Easy

What you need

  • 400g mixed greens β€” pak choi, beans, broccoli
  • 3 garlic cloves, crushed
  • 1 red chilli
  • 2 tbsp soy sauce
  • 1 tbsp vegetarian oyster sauce
  • 1 tsp sugar
  • Oil

What you do

  1. 1Have everything chopped and within reach before you start. This takes four minutes and there is no time to go looking.
  2. 2Get the pan hotter than feels sensible. Oil, then garlic and chilli for 10 seconds.
  3. 3Hardest vegetables first, tossed, 2 minutes. Then the leafy ones.
  4. 4Sauces and sugar round the edge of the pan so they caramelise rather than boil. Toss once and serve.

With tofu, to make it dinner

20 minutes Β· serves 2 Β· Easy

What you need

  • 200g firm tofu, cubed
  • 400g mixed vegetables
  • Garlic, chilli
  • Soy sauce
  • Cornflour

What you do

  1. 1Toss the tofu in cornflour and fry until crisp on all sides. Lift out.
  2. 2Stir-fry the vegetables as above.
  3. 3Tofu back in at the end so it stays crisp.
