Slow, sweet and savoury at once. The apricots are not optional.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make tagine

One way to do it. The same ones the app hands you once you have decided.

Slow, sweet and savoury

120 minutes Β· serves 4 Β· Easy

What you need

  • 800g lamb shoulder or chickpeas
  • 2 onions
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • Pinch of saffron
  • 150g dried apricots
  • 1 preserved lemon
  • Handful of almonds
  • Coriander

What you do

  1. 1Brown the meat, then soften the onions in the same pot.
  2. 2Spices in with a splash of water so they bloom rather than burn.
  3. 3Barely cover with water, lid on, lowest heat, 90 minutes. It should tremble, never boil.
  4. 4Apricots in for the last 30 minutes so they swell without dissolving.
  5. 5Chopped preserved lemon at the very end β€” it is the sharp note the whole thing is balanced against.
  6. 6Toasted almonds and coriander over the top.
