That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make kabsa

One way to do it. The same ones the app hands you once you have decided.

One pot, in order

90 minutes Β· serves 5 Β· Medium

What you need

  • 1kg chicken pieces
  • 400g basmati rice
  • 2 onions
  • 3 tomatoes
  • 1 tbsp kabsa spice mix
  • 2 dried limes (loomi)
  • 4 cloves
  • 1 cinnamon stick
  • Handful of raisins and toasted almonds

What you do

  1. 1Brown the chicken hard and set it aside. Everything after this cooks in what it left behind.
  2. 2Soften the onions, add tomato, spices, cloves and cinnamon.
  3. 3Pierce the dried limes and drop them in whole β€” they are what makes it taste like kabsa and not pilaf.
  4. 4Chicken back with water to cover, simmer 40 minutes, then lift the chicken out.
  5. 5Rinsed rice into the broth, measured: one and a half parts broth to one of rice. Lid on, lowest heat, 20 minutes, no peeking.
  6. 6Chicken back on top to warm through. Raisins and almonds over it at the table.
