Doro wat

Deep, dark and slow. Eaten with your hands off shared injera.

That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make doro wat

One way to do it. The same ones the app hands you once you have decided.

The onions take an hour

150 minutes ยท serves 4 ยท Hard

What you need

  • 6 chicken legs
  • 1kg red onions
  • 4 tbsp berbere
  • 100g spiced butter
  • 1 tbsp ginger
  • 4 cloves garlic
  • 4 hard-boiled eggs
  • 2 tbsp water

What you do

  1. 1Chop the onions finely and cook them dry, no fat, on a low heat for a full hour. They collapse into a paste. This is the recipe.
  2. 2Only then add the butter, garlic and ginger.
  3. 3Berbere in and cook it out for 10 minutes โ€” raw berbere tastes dusty.
  4. 4Chicken in, barely covered, 45 minutes on low.
  5. 5Score the eggs and add them for the last 15 minutes so they take on colour.
  6. 6Serve on injera, no cutlery.
