How to make bobotie

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

With the bay leaves standing up

80 minutes · serves 6 · Easy

What you need

  • 800g beef mince
  • 2 onions
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 2 slices white bread
  • 250ml milk
  • 3 tbsp chutney
  • 2 tbsp vinegar
  • 60g raisins
  • 30g flaked almonds
  • 3 eggs
  • 6 bay leaves

What you do

  1. 1Soak the bread in the milk and squeeze it out, keeping the milk for the topping.
  2. 2Brown the onion, add the curry powder and turmeric, then the mince until it loses its pink.
  3. 3Squeezed bread, chutney, vinegar, raisins, almonds and plenty of salt. It should taste sweet, sour and spiced all at once.
  4. 4Press into a dish. Beat the eggs into the reserved milk and pour it over.
  5. 5Stand the bay leaves upright in the custard and bake at 180C for 40 minutes, until the top is set and freckled brown.
