Butter chicken

The gentle one. Tomato, cream, and a lot of butter doing quiet work.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make butter chicken

One way to do it. The same ones the app hands you once you have decided.

The gentle one

60 minutes Β· serves 4 Β· Medium

What you need

  • 700g chicken thighs
  • 200g yoghurt
  • 2 tbsp garam masala
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 400g tin tomatoes
  • 80g butter
  • 150ml double cream
  • 1 tsp kashmiri chilli
  • 1 tsp sugar

What you do

  1. 1Marinate the chicken in yoghurt, half the spices, ginger and garlic. An hour will do; overnight is better.
  2. 2Blast the chicken under a hot grill until it takes colour. That char is most of the flavour.
  3. 3Cook the tomatoes down hard with the rest of the spices until they darken and split.
  4. 4Blend the sauce completely smooth, then push it through a sieve. Skipping the sieve is why home versions taste rough.
  5. 5Butter and cream in off the heat, then the chicken back. Do not boil it after the cream.
