Croutons, anchovy dressing, more parmesan than advertised.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make caesar salad

One way to do it. The same ones the app hands you once you have decided.

Real dressing, real croutons

25 minutes Β· serves 2 Β· Easy

What you need

  • 2 romaine hearts
  • 2 egg yolks
  • 4 anchovy fillets
  • 1 garlic clove
  • 1 tsp Dijon
  • Lemon
  • 150ml oil
  • 50g parmesan
  • Stale bread

What you do

  1. 1Tear the bread, toss in oil and garlic, bake at 190C for 12 minutes.
  2. 2Mash the anchovies and garlic to a paste β€” this is the flavour, not a garnish.
  3. 3Whisk in yolks, mustard and lemon, then trickle the oil in slowly until thick.
  4. 4Dress the leaves in a big bowl with your hands so every one is coated.
  5. 5Parmesan and croutons last, so they stay crisp.
