That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make banh xeo

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Crisp and yellow

40 minutes ยท serves 4 ยท Medium

What you need

  • 200g rice flour
  • 1 tsp turmeric
  • 400ml coconut milk
  • 150ml water
  • 2 spring onions
  • 200g prawns
  • 150g pork belly, sliced thin
  • 200g beansprouts
  • Lettuce, mint, coriander, perilla
  • Nuoc cham to dip

What you do

  1. 1Whisk the flour, turmeric, coconut milk and water to a thin batter and rest it 30 minutes. Thin is the point โ€” a thick batter makes a pancake, not a crisp shell.
  2. 2Very hot pan, a little oil, a few prawns and pork slices in first.
  3. 3Ladle in just enough batter to coat, swirling so it climbs the sides. Lid on, 2 minutes.
  4. 4Beansprouts on one half, lid on 1 minute more, then fold over and cook uncovered until the base is properly crisp.
  5. 5Torn up, wrapped in lettuce with the herbs, dipped in nuoc cham. Eaten with hands, over a plate.
