That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make fish tacos

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Battered

35 minutes ยท serves 4 ยท Medium

What you need

  • 600g white fish, in fingers
  • 120g flour
  • 1 tsp baking powder
  • 180ml cold soda water
  • Oil for frying
  • 12 corn tortillas
  • 1/4 red cabbage, shredded
  • Lime
  • 4 tbsp mayonnaise
  • 1 tsp chipotle paste

What you do

  1. 1Whisk the flour, baking powder, salt and cold soda water to a thin batter and leave it alone โ€” over-mixing makes it heavy.
  2. 2Heat the oil to 190C. Dip the fish and fry 3 minutes until pale gold. Drain on a rack, never on paper, or the bottom goes soft.
  3. 3Mix the mayonnaise with the chipotle and a squeeze of lime.
  4. 4Warm the tortillas on a dry pan. Cabbage first, fish, sauce, lime.
