That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make batata harra

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Fried hard

35 minutes Β· serves 4 Β· Easy

What you need

  • 800g potatoes, in 2cm cubes
  • Oil for frying
  • 5 garlic cloves, crushed
  • 1 red chilli
  • A large bunch of coriander
  • 1 lemon

What you do

  1. 1Boil the potatoes 6 minutes, then drain and dry them completely. Wet potatoes will not crisp.
  2. 2Fry in hot oil in batches until deep gold, 8 minutes a batch. Drain on paper.
  3. 3In a clean pan, warm 2 tbsp oil with the garlic and chilli for 30 seconds β€” no more, or the garlic turns bitter.
  4. 4Potatoes back in, coriander, salt, lemon. Toss and serve immediately.

Oven version
