How to make cong you bing

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Rolled and coiled

50 minutes Β· serves 4 Β· Medium

What you need

  • 300g plain flour
  • 180ml hot water
  • 6 spring onions, sliced thin
  • 3 tbsp oil
  • 1 tbsp flour for the roux
  • Salt
  • Oil for frying

What you do

  1. 1Pour the hot water into the flour, stir with chopsticks, knead 6 minutes to a soft dough, rest 30 minutes.
  2. 2Make a paste with the 3 tbsp oil and 1 tbsp flour β€” this is what keeps the layers apart.
  3. 3Roll thin, spread with the paste, scatter salt and spring onion, roll into a rope, then coil the rope into a snail and flatten it. The coiling makes the layers.
  4. 4Rest 10 minutes, then roll out to 5mm.
  5. 5Fry in a little oil, 3 minutes a side, pressing occasionally. Smack it between your hands when it comes out to loosen the layers.
