Buttermilk, twice dredged
240 minutes ยท serves 4 ยท Medium
What you need
- 8 chicken thighs
- 500ml buttermilk
- 300g plain flour
- 2 tsp paprika
- 1 tsp garlic powder
- Salt and pepper
- Oil for frying
What you do
- 1Brine the chicken in salted buttermilk for at least 3 hours, ideally overnight.
- 2Season the flour heavily โ more than feels right; it is the only seasoning on the crust.
- 3Dredge, dip back in buttermilk, dredge again. That second coat makes the craggy bits.
- 4Fry at 165C for 12โ15 minutes. Hotter and the crust burns before the middle cooks.
- 5Rest on a rack, never paper โ paper steams the bottom soft.
