That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make takoyaki

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

In the dimpled pan

40 minutes ยท serves 4 ยท Hard

What you need

  • 200g plain flour
  • 2 eggs
  • 600ml dashi
  • 200g cooked octopus, in small cubes
  • 4 spring onions
  • Pickled ginger
  • Takoyaki sauce
  • Mayonnaise
  • Bonito flakes

What you do

  1. 1Whisk the flour, eggs and dashi to a very thin batter โ€” thinner than pancake batter, almost like milk.
  2. 2Get the takoyaki pan properly hot and oil every dimple generously.
  3. 3Fill the dimples to overflowing โ€” flooding the whole pan is correct and the mess becomes the skin.
  4. 4A cube of octopus, spring onion and ginger in each. After 3 minutes, cut the batter between the holes with a skewer and turn each ball a quarter turn, tucking the loose batter underneath.
  5. 5Keep turning every minute for 6 minutes until round and crisp. Sauce, mayonnaise, bonito on top โ€” the flakes will move in the heat.

With prawns, in a poffertjes pan

35 minutes ยท serves 4 ยท Medium

What you need

  • Batter as above
  • 200g small prawns
  • Spring onion
  • Sauce, mayonnaise, bonito

What you do

  1. 1Same method in any dimpled pan.
  2. 2Prawns instead of octopus, which is easier to find and cooks in the same time.
