That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make karaage

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Fried twice

40 minutes Β· serves 3 Β· Easy

What you need

  • 600g chicken thigh, skin on, in large bite pieces
  • 2 tbsp soy sauce
  • 1 tbsp grated ginger
  • 2 garlic cloves, grated
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 6 tbsp potato starch
  • Oil for frying
  • Lemon wedges

What you do

  1. 1Marinate the chicken in everything but the starch for 30 minutes. Longer is not better β€” it goes salty.
  2. 2Drain, then toss each piece in potato starch and shake the excess off hard.
  3. 3Fry at 160C for 90 seconds. Lift out and rest 4 minutes. They will look underdone. They are.
  4. 4Fry again at 190C for 45 seconds, until deep gold and loud.
  5. 5Salt, lemon, and eat them within five minutes.
