That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make callaloo

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Cooked down soft

35 minutes Β· serves 4 Β· Very easy

What you need

  • 500g callaloo or spinach and chard, chopped
  • 1 onion, sliced
  • 3 garlic cloves
  • 4 sprigs thyme
  • 1 whole scotch bonnet
  • 200ml coconut milk
  • 1 tomato, chopped
  • Black pepper
  • Oil

What you do

  1. 1Soften the onion and garlic in oil with the thyme.
  2. 2Tomato in for 3 minutes until it collapses.
  3. 3Greens in with a splash of water and the whole chilli sat on top. Lid on.
  4. 4Twenty minutes on low. It should go dark and completely soft β€” this is not a dish that wants to stay bright green.
  5. 5Coconut milk in for the last 5 minutes, lots of black pepper, chilli out.

Quicker, with frozen spinach

20 minutes Β· serves 3 Β· Very easy

What you need

  • Frozen spinach
  • Onion
  • Garlic
  • Thyme
  • Coconut milk
  • Scotch bonnet

What you do

  1. 1Same, straight from frozen.
  2. 2Cook the water off properly before the coconut milk goes in.
