That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make curry goat

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Better the next day

180 minutes Β· serves 6 Β· Easy

What you need

  • 1.5kg goat on the bone, in chunks
  • 4 tbsp Caribbean curry powder
  • 1 tbsp allspice
  • 6 garlic cloves
  • 2 onions
  • Thyme
  • 1 scotch bonnet
  • 3 potatoes
  • 1 tin coconut milk
  • Oil

What you do

  1. 1Rub the goat with half the curry powder, the garlic, thyme and allspice. Leave it overnight.
  2. 2Burn the rest of the curry powder in hot oil for 30 seconds until it darkens β€” this is the step that makes it taste like the real thing.
  3. 3Sear the meat in that oil, then onions, then water to cover and the whole scotch bonnet.
  4. 4Two hours at a bare simmer, lid ajar.
  5. 5Potatoes in for the last 30 minutes, coconut milk for the last 10.
  6. 6Better tomorrow. Genuinely, measurably better.
