How to make date and nut balls

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Four ingredients

15 minutes Β· serves 12 Β· Very easy

What you need

  • 250g medjool dates, stoned
  • 150g almonds or walnuts
  • 2 tbsp cocoa
  • Pinch of salt
  • Desiccated coconut, to roll

What you do

  1. 1Blitz the nuts first, alone, until they are coarse crumbs. Doing this with the dates in gives you paste.
  2. 2Add the dates, cocoa and salt and blitz until it starts to ball up around the blade.
  3. 3If it is too dry, one more date. Too wet, a spoonful more nuts.
  4. 4Roll into walnut-sized balls and turn them in coconut. Firm in the fridge 20 minutes.
