That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make french onion soup

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

An hour of onions

90 minutes · serves 4 · Easy

What you need

  • 1kg onions, sliced thin
  • 60g butter
  • 1 tbsp oil
  • 1 tsp sugar
  • 150ml dry white wine
  • 1.2L vegetable stock
  • 1 baguette
  • 150g gruyère, grated
  • Thyme

What you do

  1. 1Onions, butter, oil and a pinch of salt in a wide heavy pan, lid on, 15 minutes to sweat them down.
  2. 2Lid off, sugar in, and now the long part: 45 minutes on medium-low, stirred every few minutes. They go gold, then amber, then properly brown. There is no shortcut and every minute you cut shows in the bowl.
  3. 3Wine in, scraping the pan, reduced by half. Then the stock and thyme, simmered 20 minutes.
  4. 4Toast rounds of baguette, float them on the soup in ovenproof bowls, heap the cheese on.
  5. 5Under a hot grill until the cheese is blistered and running down the sides.
