How to make moussaka

The proper bake

What you need

  • 3 aubergines, sliced
  • 500g lamb mince
  • 1 onion, 3 garlic cloves
  • 400g chopped tomatoes
  • 1 tsp cinnamon
  • 50g butter, 50g flour, 600ml milk
  • 1 egg yolk
  • 60g cheese

What you do

  1. 1Salt the aubergine slices for 20 minutes, pat dry, then griddle or roast until soft and bronzed.
  2. 2Brown the lamb with the onion and garlic. Add tomatoes and cinnamon and cook down 25 minutes until thick, not wet.
  3. 3Make a béchamel: butter, flour, then milk in slowly. Off the heat, beat in the yolk and half the cheese.
  4. 4Layer aubergine, lamb, aubergine, then all the sauce. Rest of the cheese over.
  5. 5Bake at 180C for 40 minutes. Then leave it 20 minutes before cutting or it will run away from you.
