That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make hot pot

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

The whole table

60 minutes Β· serves 6 Β· Easy

What you need

  • 2L stock
  • 1 packet hot pot base, or dried chilli, Sichuan pepper and doubanjiang
  • 600g thinly sliced beef and lamb
  • 400g prawns and fish balls
  • Tofu, mushrooms, leafy greens, lotus root
  • Noodles
  • Sesame paste, soy, garlic, coriander for dipping

What you do

  1. 1Get the broth going on a portable burner in the middle of the table. Half plain, half spicy, if you have a divided pot.
  2. 2Everything raw goes on plates round it. Meat sliced thin enough to see through.
  3. 3Everybody cooks their own: meat takes about 15 seconds, prawns a minute, root vegetables several.
  4. 4Each person mixes their own dipping sauce. Sesame paste, soy, garlic and coriander is the standard.
  5. 5Noodles go in at the very end, when the broth has taken on everything that was cooked in it.
