That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make jambalaya

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Creole, with tomato

70 minutes · serves 6 · Easy

What you need

  • 400g smoked sausage, sliced
  • 400g chicken thighs, diced
  • 300g prawns
  • 2 onions, 1 pepper, 2 celery sticks
  • 400g long grain rice
  • 1 tin tomatoes
  • 900ml stock
  • Cajun seasoning
  • Bay

What you do

  1. 1Brown the sausage and chicken hard and lift them out, leaving the fat.
  2. 2Vegetables in that fat, 10 minutes, then the seasoning and tomatoes.
  3. 3Rice in, stirred to coat, then the stock and the meat back in.
  4. 4Lid on, lowest heat, 25 minutes. Do not stir it — stirring makes it gluey, and the crust on the bottom is wanted.
  5. 5Prawns pushed in for the last 5 minutes. Rest 10 with the lid on before you touch it.

Cajun, no tomato

65 minutes · serves 6 · Easy

What you need

  • Sausage, chicken, prawns
  • Onion, pepper, celery
  • Rice
  • 1L dark stock
  • Cajun seasoning

What you do

  1. 1Brown the meat hard enough to leave fond on the pan — that is where the brown colour comes from instead of tomato.
  2. 2Same method, more stock, no tomatoes.
