That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make khachapuri

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Adjaruli, the boat

90 minutes · serves 4 · Medium

What you need

  • 400g strong flour
  • 250ml warm milk
  • 7g yeast
  • 1 tsp sugar
  • 400g mozzarella and feta, mixed
  • 4 eggs
  • 60g butter

What you do

  1. 1Make a soft dough with the flour, milk, yeast, sugar and salt. Knead 8 minutes and leave it to double, about an hour.
  2. 2Divide in four, roll each into an oval, then roll the two long sides inward and pinch the ends to make a boat.
  3. 3Fill with the cheese and bake at 230C for 12 minutes, until the walls are gold.
  4. 4Pull them out, make a well in the cheese, crack an egg into each, and give them 3 minutes more — the white should just set.
  5. 5A knob of butter on top, and stir the egg through at the table before you tear the ends off to dip.
