Northern curry noodles

What you need
- 200g egg noodles, plus a handful extra to fry
- 2 tbsp red curry paste
- 1 tsp curry powder
- 400ml coconut milk
- 300ml chicken stock
- 2 chicken thighs, sliced
- Fish sauce, lime, sugar
- Shallot and pickles, to finish
What you do
- 1Fry the spare noodles in a little oil until they puff and go gold. Drain and set aside.
- 2Fry the paste and curry powder in a splash of the thick coconut cream for a minute, until it smells like more than paste.
- 3Add the chicken, then the rest of the coconut milk and the stock. Simmer 12 minutes.
- 4Season with fish sauce, a squeeze of lime and a pinch of sugar until it tastes sharp as well as rich.
- 5Boil the soft noodles, bowl them, ladle over, and pile the crisp ones on top with shallot and pickles.
