Eggs barely set in tomato and green pepper, eaten straight from the pan.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make menemen

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Barely set

20 minutes Β· serves 2 Β· Very easy

What you need

  • 4 eggs
  • 3 ripe tomatoes, grated
  • 2 green peppers, chopped
  • 1 onion
  • 3 tbsp olive oil
  • 1 tsp pul biber
  • Bread to mop

What you do

  1. 1Soften the peppers and onion in the oil for 8 minutes. They should be genuinely soft, not crunchy.
  2. 2Grated tomato in β€” grated, so the skin stays behind in your hand β€” and cooked down 8 minutes until the water has gone and it is jammy.
  3. 3Crack the eggs straight in and stir slowly with a wooden spoon, folding rather than scrambling.
  4. 4Take it off the heat while it still looks slightly too wet. It carries on setting in the pan.
  5. 5Pul biber over, bread in hand, eaten out of the pan.

Hotter, with sucuk-style spice

  • 1 tbsp tomato paste
  • 2 tsp pul biber
  • 1 tsp cumin
  • Olive oil

What you do

  1. 1Fry the tomato paste and spices in the oil for a minute before the vegetables go in β€” it deepens the colour and the heat.
