That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make congee

One way to do it. The same ones the app hands you once you have decided.

Rice cooked to a whisper

75 minutes Β· serves 4 Β· Very easy

What you need

  • 150g jasmine rice
  • 2 litres chicken or vegetable stock
  • Thumb of ginger, sliced
  • Spring onions
  • Soy sauce, sesame oil
  • Whatever tops it: egg, chicken, peanuts, chilli oil

What you do

  1. 1Rinse the rice until the water runs clear.
  2. 2Simmer it in the stock with the ginger, lid ajar, for an hour. Stir occasionally so the bottom does not catch.
  3. 3It is ready when the grains have collapsed and it pours like thick cream. Loosen with more stock if it goes past that.
  4. 4Season at the end with soy and sesame. Top with anything β€” the plainness underneath is the point.
