How to make qurutob

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Torn bread under qurut

30 minutes · serves 4 · Easy

What you need

  • 2 flatbreads, ideally a day old
  • 200g qurut, or 300g thick yoghurt with 1 tsp salt
  • 3 onions, sliced
  • 100ml oil
  • 2 tomatoes, chopped
  • 1 cucumber, chopped
  • Coriander, dill and basil, a lot

What you do

  1. 1Fry the onions slowly in the oil until deep brown and sweet. Keep the oil.
  2. 2Loosen the qurut with warm water until it pours like thick cream. If using yoghurt, salt it well.
  3. 3Tear the bread into rough pieces into a wide bowl and pour the qurut over. Let it sit two minutes to soak.
  4. 4Fried onions and their oil over the top.
  5. 5Tomato, cucumber and a great deal of herbs. Eaten with hands, from the middle, by everyone at once.
