Bao buns

Steamed, pillowy, slightly sweet, and gone in three bites.

That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make bao buns

One way to do it. The same ones the app hands you once you have decided.

Steamed and pillowy

150 minutes ยท serves 4 ยท Hard

What you need

  • 300g plain flour
  • 1 tsp yeast
  • 1 tbsp sugar
  • 150ml warm milk
  • 1 tbsp oil
  • 1/2 tsp baking powder
  • 500g pork belly
  • 2 tbsp hoisin
  • Cucumber
  • Spring onion

What you do

  1. 1Make a soft dough and prove an hour until doubled.
  2. 2Knock back, work in the baking powder, and rest 15 minutes. The double raise is what makes them cloud-like.
  3. 3Roll ovals, brush one half with oil, fold over a chopstick and lift it out. The oil stops them sealing shut.
  4. 4Prove again on squares of paper for 30 minutes.
  5. 5Steam 10 minutes and do not lift the lid โ€” a draught collapses them.
  6. 6Braise the pork belly slowly with hoisin meanwhile. Fill with cucumber and spring onion.
