That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make ashak

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Leek dumplings, three layers

90 minutes ยท serves 4 ยท Hard

What you need

  • 350g plain flour
  • 180ml water
  • 1 tsp salt
  • 4 leeks, very finely chopped
  • 1 tsp chilli flakes
  • 300g minced lamb
  • 1 onion, chopped
  • 1 tbsp tomato paste
  • 1 tsp turmeric
  • 400g thick yoghurt
  • 3 garlic cloves
  • 2 tsp dried mint
  • Oil

What you do

  1. 1Make a plain dough and rest it 30 minutes.
  2. 2Salt the chopped leek, leave 15 minutes, then squeeze out every drop of water. Toss with chilli.
  3. 3Cook the mince with the onion, tomato paste and turmeric with a splash of water until thick.
  4. 4Roll the dough thin, cut 8cm circles, fill with leek and fold into half moons.
  5. 5Boil 6 minutes.
  6. 6Garlic yoghurt on the plate first, dumplings on that, meat sauce over, mint and more yoghurt on top. In that order or it is a different dish.
