That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make rice and peas

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

With kidney beans

50 minutes Β· serves 6 Β· Very easy

What you need

  • 400g long grain rice
  • 1 tin kidney beans with the liquid
  • 1 tin coconut milk
  • 2 spring onions, bruised
  • 4 sprigs thyme
  • 1 whole scotch bonnet
  • 4 allspice berries
  • 1 garlic clove
  • Salt

What you do

  1. 1Bring the beans, their liquid, the coconut milk, thyme, spring onion, allspice, garlic and the whole chilli to a boil with 300ml water.
  2. 2Simmer 10 minutes so the liquid takes on everything.
  3. 3Rinse the rice and stir it in. Taste the liquid β€” it should be slightly over-salted.
  4. 4Lid on, lowest heat, 20 minutes. Do not lift the lid.
  5. 5Off the heat 10 minutes. Lift the chilli and thyme out, fork it through.
  6. 6If the chilli splits, you will know within one mouthful.

With gungo peas

60 minutes Β· serves 6 Β· Very easy

What you need

  • Rice
  • Tin of gungo (pigeon) peas
  • Coconut milk
  • Thyme
  • Spring onion
  • Scotch bonnet

What you do

  1. 1Exactly the same. The Christmas version.
  2. 2Slightly earthier and worth trying at least once.
