That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make scotch egg

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

With a soft yolk

50 minutes Β· serves 4 Β· Medium

What you need

  • 5 eggs
  • 400g sausagemeat
  • 1 tsp dried sage
  • 1 tsp mustard powder
  • 3 tbsp plain flour
  • 120g panko
  • Oil for frying
  • Salt and pepper

What you do

  1. 1Boil four eggs for exactly 6 minutes 30 seconds, then straight into iced water. Peel carefully.
  2. 2Mix the sausagemeat with the sage, mustard powder and plenty of seasoning.
  3. 3Flatten a quarter of it on cling film, sit an egg in the middle, and use the film to wrap it round. Seal every seam.
  4. 4Flour, then the fifth egg beaten, then panko.
  5. 5Fry at 165C for 6 minutes, turning. Any hotter and the crumb burns before the meat cooks.
  6. 6Rest 5 minutes. Cut with a serrated knife, in one stroke.

Baked

45 minutes Β· serves 4 Β· Easy

What you need

  • Eggs
  • Sausagemeat
  • Panko
  • Flour
  • Oil spray

What you do

  1. 1Toast the panko in a dry pan first, or it stays pale.
  2. 2200C for 25 minutes. Less crisp, much less oil, and the yolk survives better.
