That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make tequeños

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Wrapped in a spiral

60 minutes · serves 6 · Medium

What you need

  • 300g plain flour
  • 80g butter, cold and cubed
  • 1 tsp sugar
  • 1 tsp salt
  • 100ml cold water
  • 400g firm white cheese, in fingers
  • Oil for frying

What you do

  1. 1Rub the butter into the flour, sugar and salt, then bring together with the water. Do not knead it much. Rest 30 minutes.
  2. 2Roll thin and cut into long strips about 2cm wide.
  3. 3Wrap each cheese finger in a spiral, overlapping slightly, and pinch both ends closed properly. A gap means the cheese escapes.
  4. 4Freeze for 15 minutes — this is the trick.
  5. 5Fry at 175C for 3 minutes, turning, until golden and blistered.
  6. 6Eat hot. Guasacaca or a sweet chilli sauce alongside.

With puff pastry

30 minutes · serves 4 · Very easy

What you need

  • 1 sheet puff pastry
  • Halloumi or firm white cheese
  • Oil

What you do

  1. 1Cut the pastry into strips and wrap the cheese the same way.
  2. 2Fry or bake at 200C for 18 minutes. Puffier and less chewy.
