That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make turkish coffee

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

In a cezve

10 minutes · serves 2 · Medium

What you need

  • 2 heaped tsp coffee ground to powder
  • 2 demitasse cups of cold water
  • Sugar to taste
  • 1 cardamom pod, optional

What you do

  1. 1Measure the water with the cups you will drink from. Cold water into the cezve.
  2. 2Stir in the coffee and any sugar now — it cannot be stirred later.
  3. 3Lowest possible heat. Do not stir again. It takes three or four minutes and rushing it is the only way to ruin it.
  4. 4When the foam rises to the rim, lift it off. Spoon a little foam into each cup.
  5. 5Return it to the heat twice more, letting it rise each time, then pour slowly.
  6. 6Wait a minute for the grounds to settle. Drink to the sludge and stop there.

In a small saucepan

8 minutes · serves 1 · Easy

What you need

  • 1 heaped tsp powdered coffee
  • 1 small cup cold water
  • Sugar

What you do

  1. 1Same method in the smallest pan you own.
  2. 2Harder to catch the foam. Watch it the whole time and take it off early.
