Ugali and sukuma wiki

A stiff maize block and a pan of greens, and it is most of East Africa’s dinner.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make ugali and sukuma wiki

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Stiff, and greens beside it

30 minutes · serves 4 · Easy

What you need

  • 400g white maize flour
  • 1 litre water
  • 1 large bunch collard greens or kale, shredded
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 2 tbsp oil
  • Salt

What you do

  1. 1Bring the water to a boil with a pinch of salt. Rain in about a third of the flour, whisking, and let it thicken for 3 minutes.
  2. 2Add the rest a handful at a time, working it against the side of the pan with a wooden spoon.
  3. 3Keep folding and pressing for 8 minutes. It is ready when it pulls away from the pan cleanly in one mass.
  4. 4Turn it out onto a plate and shape it into a dome with a wet bowl.
  5. 5For the greens: soften the onion, add the tomato and cook it down, then the greens with a splash of water. 8 minutes, covered. Salt at the end.
  6. 6Tear a piece of ugali, press a dent in it, scoop.
