That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make yassa

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Under a mountain of onions

90 minutes Β· serves 4 Β· Very easy

What you need

  • 8 chicken thighs
  • 6 large onions, sliced thin
  • 6 lemons, juiced
  • 3 tbsp Dijon mustard
  • 4 garlic cloves
  • 2 bay leaves
  • 1 scotch bonnet
  • 2 tbsp oil
  • Salt and pepper

What you do

  1. 1Marinate the chicken and the sliced onion together in the lemon juice, mustard, garlic and seasoning. Four hours minimum, overnight if you can.
  2. 2Lift the chicken out, wipe it, and brown it hard in oil. Set aside.
  3. 3Tip all the onion and marinade into the pan and cook it down for 30 minutes, stirring, until it goes soft and sweet and loses the raw lemon edge.
  4. 4Chicken back in with the bay and the whole chilli, lid on, 25 minutes.
  5. 5Taste. It should be sharp, sweet and savoury at once. Over rice.

Grilled first, for the char

100 minutes Β· serves 4 Β· Easy

What you need

  • Chicken thighs
  • Onions
  • Lemon
  • Dijon mustard
  • Garlic
  • Bay

What you do

  1. 1Marinate as above, then grill the chicken over coals or under a hot grill until charred rather than browning it in a pan.
  2. 2Cook the onions down separately for 30 minutes, then bring the two together for 15.
  3. 3The smoke is the difference, and it is a large one.
