That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make anticuchos

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Over coals

240 minutes · serves 4 · Easy

What you need

  • 800g beef heart, trimmed and cut into 3cm squares
  • 4 tbsp aji panca paste
  • 4 tbsp red wine vinegar
  • 4 garlic cloves
  • 1 tsp cumin
  • 2 tsp salt
  • Oil
  • Boiled potato and corn, to serve

What you do

  1. 1Trim every scrap of sinew from the heart. This is most of the work and it decides whether it is tender.
  2. 2Mix the chilli paste, vinegar, garlic, cumin and salt and marinate the meat 3 hours, or overnight.
  3. 3Thread three or four pieces per skewer, tightly.
  4. 4Very hot coals, 2 minutes a side. They are thin and they go from perfect to rubber quickly.
  5. 5Brush with the leftover marinade thinned with oil as they cook. Potato and corn alongside.

With beef sirloin instead

200 minutes · serves 3 · Very easy

  • Aji panca paste
  • Vinegar
  • Garlic
  • Cumin

What you do

  1. 1Same marinade, 3 hours.
  2. 2Grill hard and fast. Not the real thing, and a good skewer.
