That was somebody elseโ€™s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make suya

2 genuinely different takes โ€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Skewered, with yaji

45 minutes ยท serves 4 ยท Easy

What you need

  • 600g beef sirloin, sliced thin
  • 100g roasted peanuts, ground to powder
  • 1 tbsp ground ginger
  • 1 tbsp cayenne
  • 1 tsp garlic powder
  • 1 stock cube, crushed
  • 3 tbsp oil
  • Onion and tomato to serve

What you do

  1. 1Make the yaji: grind the peanuts as fine as you can without turning them to butter, then mix with the ginger, cayenne, garlic and crushed stock cube.
  2. 2Thread the thin beef onto skewers in loose folds, brush with oil, and rub half the yaji in firmly.
  3. 3Grill over hot coals or under a fierce grill, 3 minutes a side. It should char at the edges.
  4. 4Dust the rest of the yaji on as it comes off the heat โ€” the second dusting is the one you taste.
  5. 5Raw onion and tomato, and nothing else needed.
