That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make blini

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Buckwheat, yeasted

120 minutes · serves 6 · Medium

What you need

  • 150g buckwheat flour
  • 100g plain flour
  • 1 tsp instant yeast
  • 400ml warm milk
  • 2 eggs, separated
  • 1 tsp sugar
  • 1 tsp salt
  • 30g melted butter
  • Soured cream and dill, to serve

What you do

  1. 1Whisk the yeast, sugar and warm milk into both flours and leave, covered, for an hour until bubbling.
  2. 2Beat in the yolks, salt and melted butter.
  3. 3Whisk the whites to soft peaks and fold them in last. The batter should be loose and full of air.
  4. 4Cook small rounds in a buttered pan over medium heat, 90 seconds a side.
  5. 5Stack under a cloth. Soured cream and dill, or whatever you are celebrating with.
