That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make cachapa

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Sweet corn pancake

25 minutes · serves 4 · Easy

What you need

  • 600g sweetcorn kernels
  • 3 tbsp masarepa or plain flour
  • 2 tbsp sugar
  • 1 tsp salt
  • 50ml milk
  • Butter
  • 300g queso de mano or mozzarella

What you do

  1. 1Blitz the corn with the milk to a rough batter — leave some texture in it, it is not meant to be smooth.
  2. 2Stir in the flour, sugar and salt. It should be thick enough to spread rather than pour.
  3. 3Ladle into a buttered pan and shape into a round with the back of the spoon.
  4. 4Medium heat, 4 minutes a side. They are delicate; turn once, confidently.
  5. 5Cheese on one half, fold over, and press until it melts. Butter on top.
