What you need

  • 200g dates, chopped
  • 250ml boiling water
  • 1 tsp bicarbonate of soda
  • 75g butter
  • 150g dark brown sugar
  • 2 eggs
  • 175g self-raising flour
  • For the sauce: 150g butter, 200g brown sugar, 250ml double cream

What you do

  1. 1Pour the boiling water over the dates with the bicarb and leave 10 minutes, then mash roughly.
  2. 2Cream the butter and sugar, beat in the eggs, fold in the flour, then stir through the dates and their liquid. It will look far too wet. Trust it.
  3. 3Bake at 180C for 30 minutes.
  4. 4For the sauce, melt everything together and bubble for 3 minutes until it thickens and goes glossy.
  5. 5Skewer holes in the warm sponge and pour half the sauce in. The rest goes over at the table.
