Eggs benedict

The yolk goes first, then the hollandaise. Order matters.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make eggs benedict

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

With blender hollandaise

30 minutes · serves 2 · Medium

What you need

  • 4 eggs, plus 3 yolks for the sauce
  • 150g butter, melted and hot
  • 1 tbsp lemon juice
  • 2 muffins
  • 4 slices ham
  • Vinegar for the water

What you do

  1. 1Blitz the yolks with the lemon and a pinch of salt, then pour the hot melted butter in a thin, slow stream with the motor running. Too fast and it splits.
  2. 2Keep the sauce somewhere warm, not hot. Over heat it will scramble.
  3. 3Simmer a wide pan of water with a splash of vinegar. Crack each egg into a cup first, stir a gentle whirlpool, and slide it in.
  4. 4Three minutes for a set white and a liquid yolk. Lift out with a slotted spoon onto kitchen paper.
  5. 5Toasted muffin, ham, egg, sauce. In that order, immediately.
