Fufu

Pounded and stretchy, torn with the fingers, dipped in soup. Do not chew it.

That was somebody else’s answer. Yours takes about twenty seconds: a handful of either-ors, then one dish.

How to make fufu

2 genuinely different takes β€” a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

From flour, pounded in the pan

20 minutes Β· serves 4 Β· Medium

What you need

  • 300g fufu flour (cassava, plantain or yam)
  • 900ml water
  • A wooden spoon you trust

What you do

  1. 1Bring most of the water to the boil and take it off the heat.
  2. 2Rain in the flour gradually while stirring hard. It will fight back immediately.
  3. 3Back on a low heat and now work it β€” pressing against the side of the pan, folding, turning β€” for a full 8 minutes. This is the whole recipe and it is genuinely an arm workout.
  4. 4Splash in the rest of the water if it stiffens too far. It should be smooth, stretchy and glossy with no lumps at all.
  5. 5Wet your hands, shape into a ball, and serve with soup. Torn with the fingers, dipped, and swallowed rather than chewed.
