How to make grilled salmon

2 genuinely different takes — a classic, and a faster or lighter route. The same ones the app hands you once you have decided.

Crisp skin, in a pan

15 minutes · serves 2 · Easy

What you need

  • 2 salmon fillets, skin on
  • 1 tbsp oil
  • Salt
  • Lemon

What you do

  1. 1Dry the skin thoroughly and salt it. Wet skin steams and never crisps.
  2. 2Oil into a cold non-stick pan, salmon skin-side down, then turn the heat to medium. Starting cold renders the fat gently.
  3. 3Press it flat for the first 20 seconds so it does not curl. Then leave it, 6 minutes, without touching it.
  4. 4Turn for 60 seconds only. The middle should still be darker than the edges. Lemon over.

Roasted with a tray of things

25 minutes · serves 2 · Very easy

What you need

  • Courgette
  • Olives

  • Lemon

What you do

  1. 1Roast the vegetables at 200C for 12 minutes in oil.
  2. 2Sit the salmon on top, back in for 10 minutes.
  3. 3Lemon and oil over the lot.
